Freshly milled, single origin stone-ground flour: "We mill and pack every order as we receive them to make sure that all our customers get a freshly milled product.
"Bio-Wheat flour is stoneground; a process in which the wheat is ground slowly between the stones without exposing it to excessive heat, thereby retaining the nutritional vitamins, wheatgerm and fibre. In essence, stoneground promises nothing added or removed.
"Bio-Wheat flour is produced with wheat cultivated by means of biological farming methods. We apply crop rotation to replenish the soil by recycling our wheat crops with legume pastures. After harvesting, more organic matter is left in the soil to break down into natural humus. This reduces the need for chemical fertilizer, and in addition fewer pesticides are administered: pests do not like a healthy crop.
"We believe strongly in farming for the future by caring for the soil today. We understand that in the process of cultivating our crops we need to consider people first. Their health and well-being is our focus.
"Most of our wheat is sourced from our own farm and also from trusted suppliers in our area, so we can guarantee the traceability of our product.
"We have had feedback from several gluten intolerant users who report that they do not have the same symptoms of stomach cramps or feeling bloated as experienced with commercially milled flour, when eating Bio-Wheat bread. The reason for this being, that we retain most of the wheat germ in our flour during the milling process. The wheat germ contains all the essential vitamins and minerals, but also the enzymes required to digest the protein in gluten. We mill our flour coarser and at a lower temperature and speed than commercially milled flour in order to retain most of the valuable wheat germ in our product."
